
Ingredients and method
Cook – 1 cup Ceres Organic Quinoa Mix & 2 cups of water – Cook like rice… boil, then turn off the heat with a lid on it so self cooks. Once cooked and cooled, spread some out as the based on your plate.
Grate – 1 apple, 1 carrot, 1 beetroot into a bowl
add – Chia seeds, sesame seeds, pumpkin seeds, walnuts and roughly chopped almonds
Dressing – Mix together 1 tablespoon olive oil, 1 tablespoon of pesto, and two teaspoons of apple cider vinegar
Combine – Grate, add & dressing
Optional extra…. lots of feta cheese and spring onions
Poach – Bring water to a simmer in a pot, add a dash of apple cider vinegar, gently add your egg, simmer for a few minutes and then turn off the heat and let it sit for another few minutes – roughly 6 or so minutes all up in the water.
Add the grated salad to the quinoa base and drain your poach egg and place on top…. Hello salt and pepper!
